Avocado smash must be one of the yummiest things for a Saturday or Sunday morning breakfast or brunch. It is a simple recipe and there are lots of ways to experiment with additional flavours depending on what takes your fancy.
Ingredients (serves 4)
Basic ingredients (makes a lovely recipe on its own)
- 2 avocados mashed up with the back of a fork
- Juice of half a lemon
- 40-80 grams feta, crumbled (amount depending on your feta appetite)
- Salt and pepper to taste
- 4 slices of sourdough or other nice toast bread
- Good quality olive oil
Garnish (optional)
- Poached egg
- Coriander leaves
- Mint
- Toasted black sesame seeds
- Watercress microgreens
Additional Ingredients can really lift the taste so here are three alternatives:
Alternative 1
Add to the basic ingredients:
- 1/8 red onion, finely diced (optional)
- 8 slices of jalapeño, chopped into small pieces
- 1 teaspoon sweet chilli sauce
- A small handful of parsley leaves, roughly chopped
Alternative 2
Add to the basic ingredients:
- Tiny pinch of garlic powder (added to the avocado mixture)
- Raw garlic (rubbed over your toast before spreading avocado mixture)
Alternative 3
Add to the basic ingredients:
- 1 tablespoon of chopped dill
- 2 tablespoons of chopped parsley
- 100g cherry tomatoes chopped up
Method
- Mix all the ingredients in a bowl, folding in the feta as the last ingredient to add.
- Toast the bread and drizzle with olive oil.
- Place large heaped tablespoons of the avocado smash on the toast.
- Garnish with feta, coriander leaves, or mint or toasted black sesame seeds or even watercress microgreens.
- You can also add a poached egg to this to up the ante on the protein!
